VerJus Brandy Spritzer
1/4 Cup Terra Sonoma VerJus
1 shot Brandy
Dry Ginger Ale
Pour ingredients together into a chilled glass. Stir and serve.
Granish with a fresh sprig of mint.
VerJus Cucumber Salad
1/4 Cup Terra Sonoma VerJus
2 Teaspoons Rice Vinegar
1/2 Teaspoon Salt
1 Teaspoon freshly ground Ginger
Peel and cut the cucumber into thin slices. Combine ingredients
and mix. Pour the mixture over the sliced cucumber. Serve chilled.
Wine Country VerJus Marinade
Terra Sonoma VerJus
soy sauce - splash
freshly ground pepper
sesame seed oil - a few drops
garlic -chopped finely
sea salt to taste
Experiment with these ingredients. Amounts vary by taste. Try with
your favorite meats - pork and beef - and even dark flesh fish. Refrigerate
the meat for 2-4 hours prior to barbequing or searing.
VerJus Garlic Halibut
Serves 4
1-2 Halibut Steaks
1/2 cup Terra Sonoma VerJus
3 cloves garlic
extra virgin olive oil
sea salt
Prepare the Fish
Pour VerJus into marinating pan along with halibut and garlic cloves. Rub sea
salt on both size of the Halibut and sprinkle with pepper. Let sit for 45
minutes.
Cooking
Preheat skillet with olive oil. Sear halibut for 3 minutes on each side for
a rare steak. Remove and serve immediately.
